Steps:

  1. Wash hands and surfaces.
  2. In a blender, add the oats. Blend until they are finely ground into a flour.
  3. To the oat flour, add the remaining ingredients. Blend until the batter is mostly smooth.
  4. Heat a skillet or pan over medium heat. Spray with cooking spray.
  5. Pour the pancake mix onto the pan. Cook 2-4 minutes on one side until bubbles start to form around the edge.
  6. Flip, and cook another 1-2 minutes or until both sides are golden brown.
  7. Serve warm with desired toppings; save in the refrigerator for up to 5 days or in the freezer for up to 3 months. Enjoy!
