Whole Wheat Carrot Cake Muffins

Steps:

  1. Wash hands and surfaces.
  2. Wash all vegetables and herbs in the sink under cold water and dry with a paper towel.
  3. Dice onion, leek, carrot, celery, garlic, and potatoes on a clean cutting board with a sharp knife.
  4. In a large pot over medium heat, add olive oil and all the chopped vegetables. Cook for 7 minutes, stirring occasionally until the onions start to become clear.
  5. Add the spices, salt, and pepper to taste. Add flour and stir until oil is absorbed.
  6. Add vegetable broth and milk. Bring to a boil and then simmer for 30 minutes until you can pierce through the potatoes with a fork.
  7. Carefully add the soup to a blender (in small batches if needed) or use an immersion blender to blend until smooth.
  8. Transfer to a bowl, top with your favorite toppings, like chives, sour cream, or bacon. Enjoy!
